Basque Chicken

Ingredients
  

  • 3 lbs Chicken Thighs bone in, skin on
  • 2 Red Bell Peppers chopped
  • 1 Green Bell Pepper chopped
  • 1 14.5 oz Can of Fire Roasted Tomatoes diced
  • 1 lg Onion chopped
  • 8 oz Assorted Olives pitted
  • ½ cup Dry White Wine
  • 1 tbsp Smoked Paprika
  • 1 tbsp Minced Garlic
  • 1 tsp Thyme
  • 2 Bay Leaves
  • Salt and Pepper to season the chicken
  • 2 tbsp Olive Oil to brown the chicken

Instructions
 

  • Season the chicken thighs with salt and pepper to taste, then brown in a hot pan on both sides. Set aside.
  • Chop the bell peppers and onions. Saute until just softened.
  • Stir in the paprika, garlic, and thyme. Then pour in the tomatoes, dry white wine and the assorted olives. Add 2 bay leaves.
  • Sit the chicken on top of the vegetables, then put the pan in the oven and cook for 45 minutes at 400 degrees.
