Slice 4 large skinless boneless chicken breast in half and set aside.
In a small bowl, mix the olive oil, Italian seasoning, 1 tbsp of minced garlic, salt, and pepper. Pour the seasoning mixture over the chicken. Rub the seasoning into every piece, then cover and set aside.
Dice 4 Roma tomatoes, then place in a bowl, juice and all. Add garlic, basil, balsamic vinegar, salt, and pepper. Mix well, and set aside to marinate.
To a hot pan add some oil, then cook the chicken breast halves. Cook 4 minutes per side until golden brown. Cover each piece of chicken with one slice of mozzarella cheese. Place a lid on the pan and let the cheese melt.
Once the chicken is done and ready to serve, place Bruschetta on top of the chicken. Serve with your choice of pasta. Drizzle balsamic glaze onto each serving.
