Chop the red bell pepper, onion, and green onion and set aside.
Add the Chorizo to a hot pan and cook it downs.
Pour the chopped veggies into the pan with the chorizo. Cook until the meat is done and the veggies are tender. Remove from the heat.
Grease a 9x13 baking dish, then crumble the tortilla chips to fully cover the bottom of the pan, then add the chorizo mixture on top.
Use your spatula to make small spaces in the meat mixture for the eggs to fit into, then crack the eggs into those spaces.
Bake at 350 degrees for as long as it takes to cook your eggs
When done, remove from the oven then sprinkle the shredded cheese on top followed by the green onions. Serve with sour cream and hot sauce if you like.
