Sweet Potato Cake

You can call this sweet potato honeybun cake, or sweet potato dump cake, or even glazed sweet potato cake. I call it delicious and my new favorite holiday cake recipe!.

Ingredients
  

  • 1 box Golden Butter cake mix
  • ¾ cup vegetable oil
  • 4 eggs
  • 1 cup sour cream
  • 1 cup cooked, mashed sweet potatoes
  • 2 tsp vanilla extract

Sugar Swirl

  • ¾ cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg

Glaze

  • 1 ½ cup powdered sugar
  • 3 tbsp milk

Instructions
 

  • In a large mixing bowl, add the cake mix, sour cream, sweet potatoes, vegetable oil, eggs, and vanilla. Mix well then set aside
  • In a separate bowl, mix the brown sugar, cinnamon, and nutmeg. Mix well.
  • Grease a 9x13 cake pan, then pour in half of your cake batter. Spread out evenly. Then your brown sugar mixture, then the last of the cake batter. Do not mix.
  • Use a chopstick ( or fork or something ) and swirl the batter
  • Bake at 350° for 40 minutes
