Ingredients

  • 1 tbsp butter
  • 2 lbs chicken thighs boneless skinless
  • 15 oz alfredo sauce with roasted garlic
  • 8 oz sun dried tomatoes julienne cut
  • ¼ cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 handful fresh spinach

Instructions

  • Add the butter to a non stick skillet and melt over medium high heat. Add the chicken to the pan and cook for 3 minutes on each side until lightly browned.
  • Add the chicken to the crock pot. In a medium sized bowl combine the alfredo sauce, grated parmesan cheese, Italian seasoning, and sun dried tomatoes. Mix well, then pour over the chicken in the crock pot.
  • Cook on low for 3 hours. Add spinach and cook for another 5 minutes.
  • When done, check for seasoning. Add salt and pepper until it is just right for your liking, then serve over your choice of pasta. Here I used fetuccine noodles. YUMMM!
