How To Make Basque Chicken
To make basque chicken, you need 3 pounds of skin on, bone in chicken thighs, 2 red bell peppers, 1 green bell pepper, 1 large onion, 1 14.5oz can od fire roasted diced tomatoes, assorted pitted olives, dry white wine, and seasonings.
Season and brown your chicken thighs on both sides then set aside. Next chop and saute your peppers and onions until softened. Then add the seasonings and dry white wine.
Sit the chicken on top of the veggies and bake at 400 degrees for 45 minutes. When done, servie with rice or mashed potatoes. Enjoy.

Ingredients
- 3 lbs Chicken Thighs bone in, skin on
- 2 Red Bell Peppers chopped
- 1 Green Bell Pepper chopped
- 1 14.5 oz Can of Fire Roasted Tomatoes diced
- 1 lg Onion chopped
- 8 oz Assorted Olives pitted
- ½ cup Dry White Wine
- 1 tbsp Smoked Paprika
- 1 tbsp Minced Garlic
- 1 tsp Thyme
- 2 Bay Leaves
- Salt and Pepper to season the chicken
- 2 tbsp Olive Oil to brown the chicken
Instructions
- Season the chicken thighs with salt and pepper to taste, then brown in a hot pan on both sides. Set aside.
- Chop the bell peppers and onions. Saute until just softened.
- Stir in the paprika, garlic, and thyme. Then pour in the tomatoes, dry white wine and the assorted olives. Add 2 bay leaves.
- Sit the chicken on top of the vegetables, then put the pan in the oven and cook for 45 minutes at 400 degrees.
