How To make Chorizo and Eggs

To amke this delicious Chorizo and Eggs casserole, you’ll need chorizo sausage, eggs, restaurant style tortilla chips, mild cheddar cheese, red bell pepper, onion, and scallions.

First chop the red bell pepper, onion, and scallions and set aside. Add the chorizo to a hot pan and begin to cook it down. Add the chopped veggies and stir to combine. Once the meat and veggies are well cooked, remove from the heat.

Grease a 9×13 baking dish then crumble tortilla chips to fill the bottom. Then evenly distribute the chorizo mixture on top.

Make spaces in the chorizo to crack the eggs into, then bake for as much time as it takes to cook the eggs the way you want them.

  • 16 oz Chorizo Sausage
  • 1 Red Bell Pepper chopped
  • 1 Onion chopped
  • 1 Green Onion chopped
  • 6 Eggs
  • ½ cup Cheddar Cheese grated
  • 2 cups Tortilla Chips crumbled

Instructions
 

  • Chop the red bell pepper, onion, and green onion and set aside.
  • Add the Chorizo to a hot pan and cook it downs.
  • Pour the chopped veggies into the pan with the chorizo. Cook until the meat is done and the veggies are tender. Remove from the heat.
  • Grease a 9x13 baking dish, then crumble the tortilla chips to fully cover the bottom of the pan, then add the chorizo mixture on top.
  • Use your spatula to make small spaces in the meat mixture for the eggs to fit into, then crack the eggs into those spaces.
  • Bake at 350 degrees for as long as it takes to cook your eggs
  • When done, remove from the oven then sprinkle the shredded cheese on top followed by the green onions. Serve with sour cream and hot sauce if you like.
