Add the chicken, onions, potatoes, and oregano to the crock pot. Add salt and pepper to taste. Then pour in 2 tbsps of olive oil. Mix so that all of the ingredients are covered with the seasoning.
In a separate bowl, add the lemon juice, minced garlic, honey, sweet chili sauce, soy sauce, brown sugar and the dijon mustard. Mix well to combine all ingredients, then pour over the chicken and potatoes.
Place the lid on the crock pot and cook on high for 4-6hrs.
