How To Make Bruschetta Chicken

You will need skinless, boneless chicken breasts, fresh tomatoes, basil, garlic, olive oil, and balsamic vinegar.

Prepare the chicken breasts by cutting the in half and sitting them in a bowl. In a seperate small bowl, prepare the seasoning mixture.

Dice 6 roma tomatoes then add some balsamic vinegar, basil, garlic, olive oil, salt, and pepper.

Cook each piece of chicken for 4 minutes per side until it is done and golden brown. Add a slice of mozzarella cheese on top of each piece of chicken, then cover so the cheese can melt.

Place the chicken on a bed of pasta then cover in the Bruschetta topping. Drizzle balsamic glaze onto each serving.

For The Chicken

  • 4 Chicken Breast boneless and skinless
  • 2 tbsp Olive Oil
  • 2 tsp Italian Seasoning
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 1 tbsp Garlic minced
  • 4 slices Mozzarella Cheese

Bruschetta Topping

  • 6 Roma Tomatoes diced
  • 2 tbsp Basil fresh, chopped or dried equivalent
  • 1 tbsp Garlic minced
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Olive Oil
  • ½ tsp Salt
  • ¼ tsp Pepper

Balsamic Glaze

  • 1 cup Balsamic Vinegar
  • cup Brown Sugar

Instructions
 

  • Slice 4 large skinless boneless chicken breast in half and set aside.
  • In a small bowl, mix the olive oil, Italian seasoning, 1 tbsp of minced garlic, salt, and pepper. Pour the seasoning mixture over the chicken. Rub the seasoning into every piece, then cover and set aside.
  • Dice 4 Roma tomatoes, then place in a bowl, juice and all. Add garlic, basil, balsamic vinegar, salt, and pepper. Mix well, and set aside to marinate.
  • To a hot pan add some oil, then cook the chicken breast halves. Cook 4 minutes per side until golden brown. Cover each piece of chicken with one slice of mozzarella cheese. Place a lid on the pan and let the cheese melt.
  • Once the chicken is done and ready to serve, place Bruschetta on top of the chicken. Serve with your choice of pasta. Drizzle balsamic glaze onto each serving.
