The great thing about a frittata is that there’s no set recipe. Because it’s eggs and whatever else you want to put in it. For me, the secret to a good frittata is in the sausage.
How to make an italian sausage frittata
In this Frittata recipe, I use mild ground Italian sausage, but you can use whatever kind of sausage you like. You’ll want to use a generous portion of sliced onions. 8 large eggs mixed well. Flat leaf parsley, a staple in Italian cooking. Be sure to give them a good rough chop. Some freshly grated parmesan cheese to give the frittata a really nice seasoning, along with some freshly ground pepper and a pinch of salt.
Once all of the ingredients are combined in the pan, you’ll want to add some more of that delicious grated parmesan cheese to the top, then add some mozzarella cheese bits throughout. This will get the top of the frittata just as tasty as the bottom.
Finally get it into a screaming hot oven for 3-4 minutes so the cheese is nicely melted. Serve with toast and orange juice to complete your breakfast.

- 8 eggs
- 1 lb ground Italian sausage
- 2 onions sliced
- 1 tbsp olive oil
- ⅓ cup parmesan cheese
- ¼ cup flat leaf parsley
- ⅓ cup mozzarella cheese
Instructions
- Pre heat oven to 375°
- Add olive oil to a hot pan and saute the onions until transparent. Add salt and pepper to taste.
- Next, add the ground Italian sausage to the pan with the onions and cook until no longer pink.
- In a separate bowl, mix the eggs, parsley, parmesan cheese, salt and pepper to taste. Mix the eggs into the sausage and onions so it is distributed well.
- Add some pearl mozzarella balls to the top, then sprinkle on some more parmesan cheese.
- Bake in the oven for 3-4 minutes, or when the eggs are set to your preffered level.
