Santa Fe Skillet Breakfast Recipe

Kick your weekend breakfast up a few notches with this spicy skillet breakfast. The Santa Fe Skillet is a very popular Denny’s menu item made with chorizo, onions, peppers, mushrooms, and red potatoes. Jalapenos can be added if you dare to make this extemely spicy. It’s delicious either way!

How To Make Santa Fe Skillet Breakfast

If you would like to learn how to make a Denny’s style Santa Fe Skillet, you’ve come to the right place. To get started, you’ll need pork chorizo sausage, onions, peppers, mushrooms, cheddar cheese, and some eggs to finish it off. Slice the vegetables into thin strips, and grate the cheese. Freshly grated cheese is better for melting.

Stir fry the sausage with the onions and peppers, and then add in the mushrooms. Cook until the vegetables are tender. Grate the cheese while the sausage is cooking. Next, fry the potatoes in about 1/4 cup of olive oil until browned and cripy. 

This meal does not take long at all to prepare. Once the chorizo, peppers, and potatoes are done, you just need to prepare your eggs and then plate it up, and eat!!!

Ingredients
  

  • 1 lb chorizo
  • 1 onion sliced
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 4 oz mushrooms sliced
  • 6 red potatoes diced
  • 1 lb cheddar cheese grated
  • olive oil for frying
  • salt and pepper totaste

Instructions
 

  • Fry the sausage until browned. Add the sliced onions and peppers. Cook until the onions and peppers start to soften.
  • Add the sliced mushrooms. Cook for a few more minutes, then set aside.
  • Next, add oil to a hot pan and add the diced red potatoes. (Keep the skin on)Cook the potatoes until golden and crispy. Add salt and pepper to taste.
  • Cook your eggs last, scrambled, fried, or whichever way you like. To serve add the potatoes, then a layer of the chorizo mixture, cheese, and finally the eggs on top. Enjoy.

Notes

You don't need to have a cast iron skillet for this dish. It will be delicious no matter what you cook it in. Fried eggs make a wonderful topper for the spicy chorizo and potatoes breakfast. This skillet breakfast is inspired from my favorite Denny's Santa Fe Skillet
