Crock Pot Beef Roast Recipe With Video

This is the best crockpot Roast Beef recipe  I have ever tasted. It came out so tender and flavorful. I will never use another recipe to make slow cooker beef roast again!

How to make beef roast in a crock pot

To make beef roast in a slow cooker, you will need a beef chuck roast between 4-6 pounds, a crock pot large enough to fit the beef roast and vegetables, and some seasonings that will make your beef roast simply amazing.

Gather your seasonings and mix them in a bowl. Pour the seasoning mixture all over ythe beef roast, rubbing it in thoroughly. Be sure to get sessoning on all sides. Then sear the beef roast in a hot pan with some olive oil.

Saute the veggies in some olive oil until slightly softened. Then add the garlic and stir for 30 seconds. Add the carrots, celery, and onions to the crock pot and spread evenly on the bottom.

Lay the beef roast over the veggies and then pour the sauce over top. Finally, add the fresh herbs. Cover and slow cook on low for 6-8 hours depending on how big your roast is.

Equipment

Ingredients
  

  • 5 lb beef chuck roast
  • 2 tsp oregano
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp salt
  • ½ tbsp pepper
  • 3 celery stalks chopped
  • 4 carrots chopped
  • 1 onion sliced
  • 6 cloves garlic minced
  • some bay leaves, fresh thyme, and rosemary sprigs
  • olive oil to saute the veggies and sear the beef

For The Sauce

  • 2 tbsp butter
  • 3 tbsp flour
  • ½ cup red wine
  • 2 cups chicken broth
  • 2 tbsp worcestershire sauce
  • 5 tbsp tomato paste
  • 4 tbsp brown sugar

Instructions
 

  • Add the salt, pepper, chili powder, garlic powder, onion powder, oregano and cumin in a bowl and mix well. Rub the seasoning mixture all over the beef roast.
  • Add some olive oil to a hot pan and sear the beef troast on all sides until browned. Then set aside.
  • Add more oil to a hot pan and saute the onions, celery, and carrots. After about 3-4 minutes, add the minced garlic. Stir the veggies for another minute or so then transfer to the crock pot. Spread the veggies evenly on the bottom of the crock, then lay the beef over top.
  • For the sauce add the butter to a hot pan, then add the flour and stir til the flour cooks out a bit. Then add the red wine, chicken broth, worcrstershire sauce, tomato paste, and brown sugar. Stir ans simmer until the sauce is slightly thickened.
  • Pour the sauce over the meat. put in some bay leaf, thyme and rosemary sprigs over top. Cook on low 8 hrs.
